I think Sam's always been protective of Dean, too (see "Faith," for example). But I think Sam reacts to threats to Dean, whereas Dean anticipates threats to Sam.

That's a good observation.
I think Sam cares for Dean as much as Dean for Sam, but it's in Dean's personality, in what he is, to take care and protect his brother, it's just instict. Sam didn't grow up doing what Dean did.
