I love season one of OZ. I'm a big Ryan O'Reily fan and I really dig his story there, starting from a lowly gen-pop inmate and finishing as one of the riot leaders, despite having no gang of his own. ♥ Not to mention, I ship him with Adebisi so hard.
Word of warning though: OZ runs out of awesome by the time the first part of season 4 ends, so your enjoyment of the series may suffer a bit. I usually skip the remaining 2 1/2 seasons on rewatch :)
As for other series to watch after OZ, I wholeheartedly recommend The Wire - it is my favorite TV series of all time, after all - but I'd suggest picking some lighter fare to watch before it, as a palate cleanser. I think Rome would do nicely here. You might also try a sitcom like Arrested Development.
